We know our farmers (coffee producers and co-ops), our farmers know us. We establish long-term trading relationships that share knowledge and success through a more sustainable and transparent supply chain. Often it’s the personal story that captures our attention. It’s not just the score that makes a coffee special, but the journey the farmer has embarked upon, where they come from, to where they are going. We follow the story to find exceptional coffees. The first big step towards sustainability begins with traceability. This documents the chain of custody of coffee from farm to cup, including the many steps in between. We do this so you can trust the claims made about the coffees are correct. Though documentation is essential, we start the process with developing relationships with the farmers (producer and co-ops) and working with the coffee importers as the coffee is brought to our roastery. The ambition of being sustainable, zero to negative carbon emissions, crashes into reality of being competitive. How do you reduce emissions without increasing prices and hassles with your customers that have choices? Before a coffee or blend is introduced, we will undergo nearly endless trials with roasting times and temperatures. As legend tells it, Blas Alfaro’s grandfather would spend time teaching his grandson all he learned from the three prior generations. One lesson that stood out, to get to know coffee is to experiment with roasting, a lot of experimentation. With today’s advanced roasting technologies, finding the perfect roast profile can often be lost, left to the machine. Not here.
We actively resist using hyperbole; we’re the best, the best coffee you’ve ever had, etc. because when in the presence of organizations such as the Institute of Coffee Costa Rica (iCafe), World Coffee Research, or Cup of Excellence greatness is a pursuit, not a claim. We do strive to be original, to provide amazing coffees, delightful experiences, exclusively from Fulcrum Roasters.
